Carrot Ginger Miso Soup

Ingredients

  • 1 onion

  • 1 cup of coconut milk

  • 4 garlic cloves

  • 1 pound of carrots

  • 1in fresh, peeled and sliced ginger

  • 4 cups kombu dashi or vegetable broth

  • 2 tbsp olive oil

  • 3tbsp white miso

  • Sesame seeds, green onions, and cilantro for garnish

  • Yogurt for garnish

Instructions

  • Begin by chopping the carrots, ginger, onion, and garlic. These aromatic veggies lay the foundation of our flavorful broth.

  • Sauté or roast the onions and garlic until fragrant, then add the carrots and ginger. Allow them to mingle and soften.

  • Pour in the Kombu Dashi or vegetable broth and let the ingredients simmer together until the carrots are tender and infused with the ginger's warmth.

  • Blend the soup into a silky puree, and then add the miso paste. The probiotics in the miso introduce the magic touch that benefits your skin.

  • Stir in the coconut milk, bringing a comforting, luxurious texture to your soup.
