Carrot Ginger Miso Soup
Ingredients
1 onion
1 cup of coconut milk
4 garlic cloves
1 pound of carrots
1in fresh, peeled and sliced ginger
4 cups kombu dashi or vegetable broth
2 tbsp olive oil
3tbsp white miso
Sesame seeds, green onions, and cilantro for garnish
Yogurt for garnish
Instructions
Begin by chopping the carrots, ginger, onion, and garlic. These aromatic veggies lay the foundation of our flavorful broth.
Sauté or roast the onions and garlic until fragrant, then add the carrots and ginger. Allow them to mingle and soften.
Pour in the Kombu Dashi or vegetable broth and let the ingredients simmer together until the carrots are tender and infused with the ginger's warmth.
