Sardines in Herbal Tomato Sauce

Ingredients

  • 1 can sardines in olive oil ( I used this brand)

  • 1/2 sweet onion, sliced

  • 3 tomatoes, diced

  • 2 serrano peppers, sliced

  • Garlic to taste

  • 2 slices of buttered toast

  • Juice from 1 green lemon or lime

  • Pinch of salt

  • Sliced green onions

  • Oregano, thyme, basil, and parsley to taste (I used 1 tbsp each)

  • Olive oil

Instructions

  • Heat oil from sardine can in pan and sauté onions until translucent. Add more oil if needed.

  • Add tomato wedges and cook while stirring for 3-5 minutes. Then reduce to low-medium heat.

  • Add in salt, chillies, sardines, herbs & lemon juice. Stir to combine.

  • Top with green onions and serve on toast.
