Sardines in Herbal Tomato Sauce
Ingredients
1 can sardines in olive oil ( I used this brand)
1/2 sweet onion, sliced
3 tomatoes, diced
2 serrano peppers, sliced
Garlic to taste
2 slices of buttered toast
Juice from 1 green lemon or lime
Pinch of salt
Sliced green onions
Oregano, thyme, basil, and parsley to taste (I used 1 tbsp each)
Olive oil
Instructions
Heat oil from sardine can in pan and sauté onions until translucent. Add more oil if needed.
Add tomato wedges and cook while stirring for 3-5 minutes. Then reduce to low-medium heat.
Add in salt, chillies, sardines, herbs & lemon juice. Stir to combine.
Top with green onions and serve on toast.
