Savory Herb and Berry Breakfast

Ingredients

  • assortment of 3-4 small tomatoes

  • 1 egg

  • green onions

  • 4-5 figs

  • balsamic vinegar to taste

  • 1/4 cup olive oil

  • 1/2 tsp dried marjoram

  • 1/2 tsp dried oregano

  • 1/2 tsp dried thyme

  • 1/2 tsp dried basil

  • 1/2 tsp dried sage

  • 1/2 tsp dried rosemary

  • fresh currants

  • salt and pepper to taste

Instructions

  1. Preheat oven to 400F

  2. Slice the figs and tomatoes as you desire and place in a baking dish with the olive oil, salt, and herbs.

  3. Roast vegetables for 25-30 minutes.

  4. In a separate pot, bring water to a boil. Add eggs and cook for 6 1/2 minutes. Let cool in ice bath before peeling.

  5. Remove vegetables and let cool for 2 minutes, serve with the oil.

  6. Add currants, poached egg, and green onions.

  7. Add balsamic vinegar to taste.
