Instructions
Preheat oven to 400F
Slice the figs and tomatoes as you desire and place in a baking dish with the olive oil, salt, and herbs.
Roast vegetables for 25-30 minutes.
In a separate pot, bring water to a boil. Add eggs and cook for 6 1/2 minutes. Let cool in ice bath before peeling.
Remove vegetables and let cool for 2 minutes, serve with the oil.
Add currants, poached egg, and green onions.
Add balsamic vinegar to taste.
